Vai trò và cách sử dụng Vitamin trong nuôi tôm cá

Dinh dưỡng trong hệ thống nuôi trồng thủy sản là điều cần thiết để sản xuất ra một sản phẩm kinh tế với chất lượng cao và an toàn, theo ông Chandra Prakash Behera, Giám đốc kỹ thuật (Aqua Division), PVS Group, Ấn Độ.

Vitamin là chất dinh dưỡng thiết yếu được tìm thấy trong hầu hết các loại thực phẩm. Chúng thực hiện các chức năng cụ thể và quan trọng trong hàng loạt hệ thống cơ thể và đây là điều rất quan trọng để duy trì sức khỏe ở mức tối ưu. Vitamin là một nhóm không đồng nhất của các hợp chất hữu cơ cần thiết cho sự tăng trưởng và duy trì sự sống của động vật thủy sản. Phần lớn các vitamin không được tổng hợp bởi cơ thể cá hoặc với một tốc độ vừa đủ để đáp ứng nhu cầu.

Cần phân biệt vitamin với các chất dinh dưỡng thực phẩm chính (protein, chất béo và carbohydrate) ở chỗ chúng không liên quan về mặt hóa học với nhau. Chúng có mặt với số lượng rất nhỏ trong thực phẩm động vật và thực vật. Cơ thể cá cần chúng với lượng rất thấp. Có khoảng 15 loại vitamin được phân lập từ vật liệu sinh học thiết yếu và tùy thuộc vào loài, tốc độ tăng trưởng của động vật, thành phần thức ăn và khả năng tổng hợp của vi khuẩn đường ruột có ở động vật. Nhìn chung, tất cả những dấu hiệu thiếu hụt vitamin trong chế độ ăn đều biểu hiện rõ về mặt hình thái và sinh lý.

Vitamin có hai loại khác nhau là vitamin tan trong chất béo và vitamin tan trong nước.

Vitamin tan trong chất béo: chúng được hòa tan trong chất béo trước khi chúng được hấp thu vào máu để thực hiện chức năng của mình. Lượng vitamin dư thừa được lưu trữ trong gan và không bị ảnh hưởng bởi chế độ ăn kiêng. Vitamin tan trong chất béo được hấp thu qua đường tiêu hóa, với sự hiện diện của chất béo và có thể được lưu trữ trong mỡ với bất cứ chế độ ăn vượt quá nhu cầu trao đổi chất của cơ thể.

Chất béo hòa tan: Vitamin A1 (Retinol, retinal, retinoic acid), Vitamin A2 (Dehydroretinol), Vitamin D2 (Ergocalciferol), Vitamin D3 (Cholecalciferol), Vitamin E (Tocopherol, tocotrienols), Vitamin K1 (Phylloquinone), Vitamin K2 (Menaquinone), Vitamin K (Menadione).

Vitamin tan trong nước: phân hủy trong nước và không được lưu trữ trong cơ thể. Vì chúng đã được đào thải qua nước tiểu và nhu cầu cơ thể luôn đòi hỏi nguồn cung cấp liên tục mỗi ngày trong chế độ ăn cá/tôm. Vitamin tan trong nước có thể dễ dàng bị phá hủy hoặc bị rửa trôi trong quá trình dự trữ hoặc chuẩn bị thực phẩm. Lượng vitamin dự trữ sẽ nhanh chóng bị tiêu hao trong khi không có nguồn vitamin tan trong nước vào chế độ ăn thường xuyên.

Vitamin tan trong nước: Thiamin (Vitamin B1), Riboflavin (Vitamin B2), Niacin (vitamin B3) Vitamin B6 (Pyridoxol, pyridoxal, pyridoxamin), axit pantothenic (vitamin B5) Biotin (vitamin H, vitamin B8), acid folic (vitamin M, Vitamin Bc, Vitamin B9) Vitamin B12 (Cobalamin), Choline (Gossypine), Vitamin C (axit ascorbic).

Nicotinic acid (niacin, B3): lipid, protein và chuyển hóa axit amin.

Biotin (H): tiết enzyme, tổng hợp purine và lipid, oxy hóa chất béo và carbohydrate.

Folic Acid (M): hình thành tế bào máu, điều chỉnh lượng đường trong máu và sự trao đổi chất khác nhau.

Cyanocobalamin (B12): hệ thống enzyme, chuyển hóa cholesterol.

Inositol: thấm thấu qua màng tế bào, là thành phần cấu trúc của xương, tim và mô não, tăng trưởng tế bào gan và tủy xương, vận chuyển lipid trong gan (cholesterol), tổng hợp RNA.

Choline: tăng trưởng và FCR tốt hơn, duy trì cấu trúc tế bào và truyền xung động thần kinh, vận chuyển lipid trong cơ thể.

Chức năng sinh học của các vitamin tan trong chất béo

Retinol (Vitamin A): hoạt động sinh học cao nhất, thị lực bình thường, tạo thành sắc tố thị giác, duy trì biểu mô tiết nhầy qua đường sinh dục, da, xương, vùng dạ dày và đường ruột, bảo vệ màng nhầy và phát triển mô xương, chuyển hóa tế bào biểu mô, vận chuyển enzyme, phân hủy protein từ lysosome.

Cholecalciferol (vitamin D): chuyển hóa canxi và phốt pho, tăng trưởng mô xương, tổng hợp các protein liên kết canxi, chuyển đổi phốt pho hữu cơ thành phốt pho vô cơ trong xương, duy trì canxi trong máu, sự lắng đọng và quá trình oxy hóa citrate trong xương.

Tocopherol: hoạt động như chất chống oxy hóa ngoại bào và nội bào, tan trong lipid, bảo vệ các axit béo cao phân tử không bão hòa, có vai trò quan trọng trong hô hấp tế bào, sinh tổng hợp DNA và coenzyme Q.

Phylloquinone (Vitamin K): duy trì đông máu bình thường, vận chuyển electron và oxy hóa phosphoryl trong các vi sinh vật.

Vitamin C

Vitamin C có lẽ là quan trọng nhất vì nó là một chất chống oxy hóa mạnh trong miễn dịch cho cá/tôm. Cơ thể cá và tôm cơ cần vitamin C (axit ascorbic hoặc ascorbate) trong tình trạng sức khỏe thích hợp.

+ Vitamin C có nhiều lợi ích cho cơ thể cá/tôm bằng cách liên kết các tế bào với nhau thông qua tổng hợp collagen. Collagen là một mô liên kết giữ cơ bắp, xương và các mô khác nhau. Collagen cũng cần thiết giúp cho vết thương mau lành.

Chức năng chính của vitamin C

Nhiệt độ nước: chế độ ăn với vitamin C giúp cá trong giai đoạn nhiệt độ thấp để nâng cao hiệu quả tiêu hóa và sau đó thúc đẩy tốc độ tăng trưởng.

Căng thẳng: Nồng độ acid ascorbic trong các mô ở cá thay đổi khi cá trong giai đoạn stress. Vitamin C ngăn ngừa stress ở mức độ khác nhau như: áp lực môi trường, xử lý stress, bệnh do stress, chuyển hóa stress, thẩm thấu stress,… của các loài cá và tôm.

Độc tố Gasses Eliminator: Acid ascorbic giúp loại bỏ các tác động bất lợi của amoniac lên tăng trưởng của các loài cá và làm giảm tác động độc hại của nitrit ở mức độ khác nhau trong các hệ thống nuôi trồng thủy sản tập trung.

Chữa lành vết thương: Vitamin C làm cho sự hình thành collagen trong cơ thể và cơ thể cá/tôm nhanh chóng lành vết thương tối ưu.

Khả năng miễn dịch: Vitamin C thuộc top danh sách miễn dịch tự nhiên cho cơ thể cá/tôm. Vitamin C có tính chất kích thích miễn dịch và đáp ứng miễn dịch. Vitamin C bảo vệ hệ thống miễn dịch cho cá/tôm bằng cách khuyến khích hoạt động của các tế bào miễn dịch bao gồm bạch cầu trung tính và đại thực bào. Collagen giúp ngăn ngừa các bệnh khác nhau gây ra bởi vi khuẩn và virus. Chất nhầy giúp ngăn ngừa các vi sinh vật xâm nhập vào cơ thể qua da, mang và niêm mạc đường tiêu hóa. Vitamin C ngăn chặn vi khuẩn bám vào tế bào biểu mô. Nồng độ vitamin C trong tế bào bạch cầu cho phép hệ thống miễn dịch hoạt động tốt bằng cách cung cấp chất chống lại và bảo vệ sự tổn thương oxy hóa các gốc tự do sinh ra trong hoạt động của cơ thể chống lại bệnh nhiễm trùng do vi khuẩn, virus hoặc nấm.

Chất chống oxy hóa: Các gốc tự do, chẳng hạn như superoxide, các ion hydroxyl và nitric oxide, tất cả đều chứa một electron tự do. Yêu cầu chế độ sử dụng vitamin cho cá và tôm được xác định bằng cách cho ăn theo mức phân loại của từng loại vitamin. Hầu hết các loài cá và tôm đều có các yêu cầu về chế độ sử dụng vitamin theo định lượng sẽ phụ thuộc vào một số yếu tố quan trọng bao gồm:

– Thói quen, kích thước và tốc độ tăng trưởng của cá hoặc các loài tôm nuôi.

– Khả năng tổng hợp vitamin thực vật từ ruột của các loài cá, tôm.

– Hệ thống nuôi dự trù sẽ được sử dụng (thâm canh, bán thâm canh, siêu thâm canh) và tính sẵn có của các sinh vật là nguồn thức ăn tự nhiên trong môi trường nước.

– Hàm lượng dinh dưỡng của chế độ ăn được sử dụng.

– Quá trình sản xuất sẽ được sử dụng cho việc sản xuất khẩu phần thức ăn.

– Các đặc tính lý hóa của môi trường nước và tình trạng sinh lý của cá hoặc các loài tôm nuôi.

Hòa tan của các vitamin tan trong nước

Ngược lại với các vitamin tan trong chất béo (A, D, E và K), các vitamin tan trong nước có thể dễ dàng bị biến mất từ thức ăn thông qua thẩm thấu trước cá sử dụng. Nhìn chung, kích thước viên thức ăn và thức ăn vẫn còn thừa trong nước thì chúng càng dễ bị mất chất dinh dưỡng hòa tan trong nước. Axit L-ascorbic (vitamin C) đã được tìm thấy là đặc biệt dễ bị mất thẩm thấu.

Sự thiếu hụt các vitamin từ chế độ ăn có bổ sung kháng sinh

Ngược lại với các vitamin tan trong nước, cá và tôm tích lũy vitamin tan trong chất béo khi điều kiện chế độ ăn vượt quá nhu cầu trao đổi chất. Một số trường hợp tích lũy như vậy được xem là điều kiện độc hại có thể sản sinh ra hypervitaminosis.

Dấu hiệu độc tính của vitamin: tốc độ tăng trưởng giảm, hoại tử nặng/lở loét hậu môn, đuôi, vây ngực và vùng chậu, vẹo cột sống, ưỡn cột sống, tỷ lệ tử vong tăng lên, gan vàng nhợt nhạt, vận động kém, màu sẫm, hiệu quả chuyển đổi thức ăn kém, giảm tập trung hồng cầu trong máu.

Dấu hiệu của sự thiếu hụt vitamin ở cá tôm

Riboflavin: Kém ăn, chậm phát triển, viêm giác mạc, biến dạng cột sống, tổn thương vây nghiêm trọng, xuất huyết vây, cơ thể yếu ớt, cơ thể có màu sáng hoặc màu tối, sợ ánh sáng, vận động kém, thiếu máu.

Niacin: Kém ăn, chậm phát triển, hiệu quả sử dụng thức ăn giảm, màu sẫm, bơi lội bất thường, co giật cơ trong khi ngưng vận động.

Acid Pantothenic: Kém ăn, giảm tăng trưởng, hoại tử mang, tỷ lệ tử vong cao, mang và gan nhợt nhạt, thiếu máu, chất nhầy bao phủ mang, vận động kém.

Thiamine: Kém ăn, chậm phát triển, màu sẫm, tỷ lệ tử vong cao.

Pyridoxine: Rối loạn thần kinh, kém ăn, vận động kém, bơi lội thất thường và nhanh, da và toàn bộ cơ thể có màu xanh, thiếu máu, hô hấp nhanh.

Biotin: Kém ăn, tốc độ tăng trưởng giảm, tăng tỷ lệ tử vong tăng, sử dụng thức ăn kém hiệu quả, mắc bệnh xanh nhớt (cá hồi suối), tổn thương ở đại tràng, lá mang mỏng/dày, mang cá nhợt nhạt.

Axit folic: Thiếu máu, phát triển kém, kém ăn, vận động kém, màu sẫm, mang cá và gan nhợt nhạt, bụng phình to với dịch cổ trướng.

Vitamin B12: Kém ăn, giảm tăng trưởng, thiếu máu, hồng cầu bị phân mảnh, hiệu quả sử dụng thức ăn kém, cơ thể có màu tối.

Choline: Giảm tăng trưởng, gan nhiễm mỡ, hiệu quả sử dụng thức ăn kém, xuất huyết thận và ruột.

Inositol: Giảm tăng trưởng, bụng trương to, cơ thể sẫm màu, da và vây tổn thương/xuất huyết, mất niêm mạc da, kích thích nhu động dạ dày.

Vitamin C: Giảm tăng trưởng, xuất huyết cục bộ/vây, biến dạng/mang xoắn sợi, mức độ phục hồi vết thương kém, tỷ lệ tử vong tăng lên, trứng giảm tỷ lệ nở, hội chứng chết đen (phần xương ngoài đen; tổn thương melanized haemocytic), hiệu quả sử dụng thức ăn giảm, tăng trưởng và sự sống kém.

Vitamin A: Giảm tăng trưởng, mất sắc tố, hình thành mây ở biểu mô giác mạc và dày lên, thoái hóa võng mạc, kém ăn, màu sắc cơ thể nhạt dần, xuất huyết vây và da, mang bất thường/biến dạng.

Vitamin D: Tăng trưởng và hiệu quả thức ăn giảm, kém ăn, gan/cơ và hàm lượng lipid trong huyết tương giảm, giảm tỷ lệ sống.

Vitamin K: Tăng thời gian đông máu, thiếu máu, xuất huyết mang, mắt, mô mạch, xuất huyết da.

Vitamin E: Giảm tăng trưởng, tràn dịch màng bụng, thiếu máu, dập mang, lắng tụ ceroid ở lá lách, tỷ lệ tử vong tăng lên, mang cá nhợt nhạt, tổn thương cơ/thoái hóa, giảm tỷ lệ trứng nở/hiệu quả sinh sản, giảm sự sống.
